Ingredients (Serves 8):

  • 2 cups penne pasta

  • 1 green bell pepper, finely chopped

  • 1 small tomato, finely chopped
  • 1 tsp cumin seeds
  • 1 tsp coriander powder

  • Salt to taste
  • Oil

Instructions:

  1. Turn on your Instant Pot and set it to "sauté" mode. Once heated, add oil and cumin seeds to the pot. 
  2. Once the cumin seeds start to splutter, add the grated ginger and garlic and sauté for a minute. 
  3. Add the chopped onions and sauté until they turn translucent. 
  4. Add the chopped tomatoes and all the spices (turmeric powder, coriander powder, garam masala powder, red chili powder, and salt) and mix well. 
  5. Add the chopped bell peppers and carrots and sauté for 2-3 minutes. 
  6. Add the penne pasta and mix well. 
  7. Add 2 cups of water to the pot and mix everything together. 
  8. Close the Instant Pot lid and set the pressure cooker to “manual” mode for 5 minutes. 
  9. Once the timer goes off, let the pressure release naturally for 5 minutes before opening the lid. 
  10. Give the dish a good stir and garnish with fresh coriander leaves. 
  11. Your delicious Masala Pasta is now ready to serve! Enjoy it hot as a main course or as a side dish.
